I nominate all of the SaGa series for this catagory.  They've all had fantastic music--and the SFC/SNES versions along with the PS2 version have had the best.  If you haven't listened to them yet I highly recommend it.

sorry, i keep pretty much everything muted while i play and keep winamp or vlc going for music/video in the background. it's been so long that the only games i REALLY remember in terms of music are like ff4 and 6.

Try Dual Orb 2's music. It's pretty nice, but unfortunately the variety ends there.

I remember ActRaiser 2's music being good too, shame the game itself was pretty awful compared to the original.
